I rode the train to Santa Fe and had some of the best Gumbo I ever had. It was spicy at first and then it started tasting sweet/tangy in a good way. If you like spicy thats where you should go to get gumbo,I recommend it and give it a 4 out of 5 rating.

Luke, this sounds like a delicious soup! I will have to try it sometime. I have never been to Vinaigrette Restaurant in Santa Fe.
